These are my husbands favorite! He will often hint that I need to make them by bringing home a few extra packs of blueberries for the week.
BLUEBERRY MUFFINS Makes: about 12 medium sized muffins / 20-30 minutes prep and bake
Ingredients 1 1/2 cups all-purpose flours 1/4 cup oats 1 tablespoon whole flax seeds 3/4 cup granulated sugar, set aside 1 tablespoon to top muffins 1/2 teaspoon salt 2 teaspoons baking powder 1/3 cup canola or grape seed oil 1 large eggs 1/2 cup milk, dairy and non-dairy both work 1 1/2 teaspoons vanilla extract 1 cup (even a handful more) fresh blueberries
Directions Heat oven to 400 degrees F. Line 8 standard size muffin tins with paper liners Whisk dry ingredients together in a large bowl Whisk in wet ingredients until fully combined Fold in blueberries Pour the batter into each paper liner (easy hack is to use an ice cream scoop) Sprinkle a pinch of sugar on top of each muffin Bake muffins 15-20 minutes or until tops are golden (easy hack to check if cooked is to stick a toothpick down the center. If it pulls out with crumbs instead of wet batter they are done!) Transfer to cooling rack Keep sealed and refrigerated.
POACHED EGG AND AVOCADO TOAST
I fell in love with this recipe because it is simple and quick for a fully nutritious breakfast!
POACHED EGG AND AVOCADO TOAST Makes: 1 / 10-15 minutes
Ingredients 1 tablespoon vinegar 1 egg 1 slice whole grain bread ⅓ avocado (Confession: I love avocado and will usually use half. Plus, it's just easier.) handful of quartered heirloom or grape tomatoes 3 slices of red onions salt and pepper, as desired
Directions Fill a small pot 3/4 full with water and bring to a boil Add vinegar to boiling water then reduce heat down to a simmer Crack the egg into a measuring cup or ramekin. Then, pour the egg into the simmering water untouched for 4 minutes for a cooked and slightly runny egg While the egg is cooking, toast the slice of bread and prepare the smashed avocado and toppings Once the egg is cooked remove it from the water using a slotted spoon and place it on paper towel. Pat egg to dry. Layer avocado on the toast followed by the tomato, onion, and egg. Top with freshly cracked pepper and salt to taste. Enjoy!
